'Vicolo Colombina' Hello my English readers, Yesterday i went to Bologna, city of culture and food-lovers.During my visit I went to a local restaurant, called ‘Vicolo Colombina’ situated in a small street near Piazza Grande. When you entered you are immediately catapulted into a homely atmosphere. As I was waiting to be placed, a waiter passed me by carrying another clients’ order….I suddenly felt like my legs wanted to follow the dish. ‘’Hey, wait a minute!’’ I said to my legs “, you will soon get your own dish”. After a few minutes my legs and I were comfortably sitted at a table. I opened the Menu and I saw it: “Tagliatelle alla Bolognese”..

And now the moment I was waiting for since the beginning... the waiter brought me the “Tagliatelle alla Bolognese”, a kind of pasta served with a minced meat and tomato sauce. The pasta was handmade and not too thick not too thin just the right size to absorb the sauce and transfer all the aroma of the sauce directly into the pasta. It’s common belief that chocolate has a positive effect on mood but the person who wrote that, has never tried this restaurant’s “tagliatelle”. Another dish to taste! “Lasagne alla Bolognese”, happiness in the shape of Lasagna. It’s not as easy, as it may seem to cook this kind of pasta.
In fact the pasta has to be crisp, stuffed with minced meat, tomato sauce and béchamel in order to mix all the fragrances. Obviously, it depends on individual taste.
In my opinion, it was great ! You are probably asking yourselves “What is béchamel ?”. Well, it is also known as ‘ white sauce’, it is made with a ‘roux’ of butter and flour cooked in milk. This lasagna took me back to my childhood. It recalled me the happy sundays I used to spend in my grandparents’ house, lunches which were full of smiles, laughter and of course good italian food!
